A rich and comforting risotto made with tender chicken, mushrooms, carrots, red onion and fresh chili. The rice is slowly cooked with dry red wine and broth, then combined with the chicken and vegetables for a hearty one-pan meal.
Ingredients
- Chicken breast fillet, cut into pieces and previously cooked
- Risotto rice
- Red onion, chopped
- Fresh chili pepper, chopped
- Carrot, sliced
- Mushrooms, sliced
- Butter
- Dry red wine
- Chicken or vegetable broth
- Salt
- Freshly ground black pepper
Instructions
- Prepare the chicken and vegetables
Add the previously cooked and sliced chicken breast to a wok-style pan. Add the red onion, chili pepper, sliced carrot and mushrooms. - Cook the vegetables
Cover the wok and let everything cook gently until the vegetables begin to soften and all the flavors come together. - Remove from the wok
Transfer the chicken and vegetable mixture from the wok and set it aside. - Start the risotto
Add butter to the same wok. Once melted, add the risotto rice and stir well so the grains are coated in butter. - Add the red wine
Pour in the dry red wine and stir. Allow the rice to cook until most of the wine has been absorbed. - Slowly add the broth
Add a little broth and continue stirring. As the rice absorbs the liquid, gradually add more broth. Repeat until the rice becomes tender and creamy. - Bring everything together
Return the chicken, mushrooms, carrot, red onion and chili mixture to the wok. - Finish the risotto
Mix everything thoroughly and cook together briefly so the chicken and vegetables are hot and evenly distributed throughout the risotto. - Serve immediately
Serve the risotto hot while it’s creamy and freshly cooked.
Risotto Cooking Guide
For the best texture, add the broth gradually rather than all at once. Let the rice absorb most of the liquid before adding the next portion. The finished risotto should be creamy while the individual grains of rice still have a slight bite.
K.O. Sizzle Forge Tip
Don’t rush the broth. Adding it gradually while stirring allows the rice to release its starch and naturally creates that creamy risotto texture. The dry red wine adds extra depth and makes this version stand out from a classic chicken risotto. 🍷🔥
